What is the Gluten Touch gluten washer?
Gluten Touch is the washing unit of the Bastak Gluten Q-System, used to determine the amount of gluten in the flour and semolina that go into bread, pastry, biscuits and pasta. Wet gluten, gluten index and dry gluten values show whether a flour conforms to standards, and they predict final product volume and baking and cooking quality.
The device is controlled from a high-resolution touch screen. Operators select the test, follow each stage and read the remaining time on one screen.

Working principle
The flour sample is kneaded into a dough with salt solution and then washed with the same solution. Washing removes the starch and the soluble proteins, and the wet gluten remains. The weight of this wet gluten gives the gluten amount of the sample.
