Working Principle;
The flour sample to be tested is made into dough with a 2% saltwater solution. After this dough is washed with a 2% saltwater solution, starch, water-soluble proteins (albumins), and dilute water-soluble proteins (globulins) are removed to obtain a wet gluten sample. The wet gluten obtained provides information about the gluten content of the sample.

Aluminum parts are anodized and metal parts are galvanized before painting to prevent corrosion that the device will be exposed to due to the tests being carried out with salt water and to ensure long-term use.
